Cheese Towers and Grilled Fruit

Torre de Queso y Frutas a la Parrilla

Ingredients

For the marinade:
1 tablespoons LALA® butter, melted
1/2 cup orange juice
1/4 cup dark brown sugar
1 small cinnamon stick, broken into pieces
1 tablespoon cardamom, ground
1 teaspoon ginger, shredded
1/2 habanero pepper, deveined, seeded and chopped
1 tablespoon mint leaves, washed and disinfected

For the cheese and fruit:
1 medium-size LALA® panela cheese
1/2 small pineapple
2 apples
2 peaches
2 plums

Procedure

In a bowl, mix all the marinade ingredients until thoroughly mixed.
Pre-heat your grill.
Slice the LALA® panela cheese, remove pineapple skin and slice. Cut the rest of the fruit and let marinate in the habanero mixture. Cover the bowl with cling plastic wrap and place in your refrigerator for 5 minutes until the LALA® panela cheese and the fruits absorb all the flavors and are firm enough to be grilled.
Cook on the grill making sure you get good grill marks, and serve arranging the fruit like a tower. Garnish with mint leaves. As an extra treat, you may add a scoop of vanilla ice cream.
